Crockpot Mississippi Chicken Noodle Soup

Mississippi Chicken Noodle Soup is real simple to make. No need to pre-cook anything. Everything gets added to the slow cooker for easy clean up.

Ingredients
  

  • 3 lbs boneless skinless chicken thighs
  • 1 packet Au jus gravy or brown gravy
  • 1 packet Ranch dressing mix
  • ΒΌ cup butter, sliced
  • 5-6 pepperoncini (add more for extra level of heat)
  • 2-3 tbsp. pepperoncini juice (add more for extra level of heat)
  • 4 cups chicken broth
  • 1 can (10.5) oz. cream of chicken soup
  • 8 oz. medium egg noodles, uncooked

Instructions
 

  • Place chicken in crockpot. Sprinkle packets of gravy mix and ranch dressing mix evenly over chicken.
  • Place sliced butter and whole pepperoncini's over on top of chicken. Pour in pepperoncini juice.
  • Add cream of chicken soup. Pour in 4 cups of chicken broth and stir well. Cover crockpot and cook on high for 3-4 hours or cook on low for 5-6 hours.
  • Take chicken out of crockpot and place on a plate or cutting board and shred with 2 forks. Place shredded chicken back in crockpot.
  • Add uncooked egg noodles to crockpot. Mixing well to submerge noodle in chicken broth. If you DO NOT have enough chicken to cover noodles add just enough to make below broth.
  • Recover and cook on high for 30 minutes. Stir mixture well. Cover and cook an additional 30 minutes or until noodles are done.

Notes

Instant pot version Instructions:
Place chicken in instant pot. Sprinkle packets of gravy mix and ranch dressing mix evenly over chicken. Place sliced butter and whole pepperoncini's over on top of chicken. Pour in pepperoncini juice. Add cream of chicken soup. Pour in 4 cups of chicken broth and stir well. Cover instant pot and set vent to the sealed position. Select a cook time of 10 minutes at high pressure. After the cook time is complete, allow a 15-minute natural release of pressure, followed by a quick release of any remaining pressure. While chicken is cooking in pressure cooker. Cook uncooked egg noodles according to package direction on stove. Take chicken out of crockpot and place on a plate or cutting board and shred with 2 forks. Place shredded chicken back in crockpot. Add cooked noodles stir well. You can serve immediately. I prefer to let it sit for a few minutes, the sauce will thicken a bit as it cools.
