Stuffed Bell Peppers
Stuffed bell peppers is an easy side dish or dinner with tender peppers stuffed with ground beef with tomato sauce, onions, seasonings, and rice. Then topped with cheese.
Ingredients
- 4 (any color) bell peppers
- 1 lb ground beef
- ½ cup chopped onion
- 1 tsp garlic, minced
- 1 cup cooked white rice
- 1 (8 oz.) can tomato sauce
- 1 cup shredded cheese of your choice (I use triple cheese)
- Cooking spray
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees. Coat baking dish with cooking spray.
- Slice tops off peppers and remove the ribs and seeds inside.
- Boil peppers for about 5 minutes to soften. While the peppers are boiling.
- Cook ground beef and drain any excess grease.
- Add onions and garlic. Cook until onions soften.
- Add the cooked rice, tomato sauce stir to combine.
- Stir in 1/2 cup cheese, salt and pepper to taste.
- Remove peppers and drain excess water.
- Fill each pepper with meat mixture and top with remaining cheese.
- Cover and bake 20 minutes.
- Uncover and bake another 10 minutes or until cheese is melted or browned and peppers are tender.
