Low Carb Buffalo Chicken Lettuce Wraps

If you’re a fan of buffalo chicken wings. Then you will love this recipe. All the favors you love from buffalo wings without the added fat. This slower cooker recipe is super easy make.

 

Ingredients:

For the chicken:

  • 24 oz. boneless skinless chicken thighs
  • 1/2 onion, diced
  • 1 clove garlic minced
  • 16 oz. fat free low sodium chicken broth
  • 1/2 cup hot sauce (your choice) I use Moore’s or Sweet Baby Ray’s
  • 6 large lettuce leaves, (I use Iceberg)

Directions:

In a slow cooker, combine chicken, onion, garlic and broth (enough broth to cover chicken, use water if not enough broth). Cover and cook on low for 8 hours or on high for 4 hours. Remove the chicken from slow cooker, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return the chicken to the slow cooker with the 1/2 cup broth and hot sauce and cook on high for an additional 20-30 minutes until hot.

Place 1/2 cup buffalo chicken to lettuce leaf and top with your favorite toppings. I like to add diced tomatoes, cheese and ranch dressing.
