Easy Chicken and Broccoli with Garlic Alfredo Sauce
This is one of my favorite meals. Easy for busy nights that you can throw it together in minutes
Prep Time: 10 mins Cook Time: 10 mins Total Time: 20 mins
Ingredients:
- 10-12 oz. bag frozen chopped broccoli, thawed to room temp.
- 4 boneless skinless chicken thighs, cooked, cut into bite size
- 1 tbsp. Olive Oil
- 1/2 cup butter plus 1 tbsp.
- 1 tsp. minced garlic
- 1/2 tsp. garlic powder
- 1 1/2 cup heavy whipping cream
- 1 cup finely shredded parmesan cheese
- salt and pepper to taste
Directions:
In a skillet add 1 tbsp. olive oil and 1 tbsp. butter, slowly melt over low heat. Add chicken thighs and cook over medium heat until done. Then cut into bite size. While chicken is cooking. In a large sauce pan, slowly melted butter over low heat. Stir in heavy whipping cream, garlic powder, garlic, salt and pepper. Then increase heat to medium. Add finely shredded parmesan cheese and stir until melted. Then add broccoli and bite size chicken stir until coated with sauce and hot. Serve and ENJOY!
Notes:
Substitutions: You can use fresh broccoli steamed instead of frozen. You can use chicken breast, shrimp or even turkey. I choose to use chicken thighs they are more flavorful. You can also use mozzarella instead of parmesan.
