Ingredients:
- 2 large sweet onions
- 1 egg
- 2/3 C. water
- 1 tblsp. vegetable oil
- 1 tsp. lemon juice
- 1 C flour
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
- cooking oil
Directions:
Cut onions into 1/2 inch slices and separate slices into rings. Place onion rings in a large bowl and cover with ice water. Let soak for 30 minutes. Meanwhile, in a medium mixing bowl, beat together egg, water, vegetable oil and lemon juice. In a separate bowl, combine flour, baking powder, salt and cayenne pepper. Add flour mixture to egg mixture, stirring until smooth. In a large skillet, heat 1″ cooking oil to 375°. Drain onion rings and dip each ring into the batter mixture. Fry battered onion rings in hot oil. a few at a time, for 1 to 1 1/2 minutes on each side or until onions rings are golden brown. Let drain on paper towels.
