Enchilada Casserole
Enchilada Casserole - Beef & Cheesy Mexican Casserole! Ground beef, taco seasoning, Rotel, enchilada sauce, cream cheese, low carb tortillas and triple cheddar cheese. Great flavor and so easy to make! Top with your favorite taco toppings for a delicious meal.
Ingredients
- 1½ lbs. ground beef
- 1 (1 oz.) packet taco seasoning
- ¼ cup water
- 1 (10 oz.) can enchilada sauce
- 1 (10 oz.) can Rotel tomatoes with green chiles, undrained
- 12 (6 in.) flour or corn tortillas
- 4 oz cream cheese
- 2 cups triple cheddar cheese, shredded or Mexican cheese
Instructions
- Preheat oven to 350°F. Lightly spray a 9x13-inch baking dish with cooking spray. Set aside.
- Brown ground beef in a skillet. Drain fat. Add the packet of taco seasoning and water. Simmer until liquid is absorbed, about 5 minutes.
- Add the can of enchilada sauce and Rotel tomatoes with green chiles to skillet. Simmer for 5 minutes. Remove from heat. Spread half of meat mixture in the bottom of the baking dish.
- Spread cream cheese on top of each tortillas. Top cream cheese with a little shredded cheese. Fold tortillas like a burrito. Place folded tortilla on top of meat mixture, pour remaining meat mixture over top of the tortillas. Sprinkle the remaining cheese on top of meat mixture.
- Cover and bake for 20 to 25 minutes.

Serve with your favorite Mexican rice. I served mine with yellow rice.

I made this last night and everyone loved it!! Instead of making a casserole I just put everything in the wraps. Was even told it’s a favorite now.
