Creamy Potato Soup
This is a favorite comfort food in my household. A delicious and easy potato soup that can be made in one pot! A creamy potato goodness topped with cheese and bacon.
Ingredients
- 3 pounds russet potatoes, peeled and cubed into 1 inch pieces
- 4 cups chicken broth
- 6 slices bacon, cooked and chopped
- 1 (10.5 oz.) can cream of chicken soup, you can use cream of celery or mushroom your choice
- ⅖ cup sour cream
- ⅔ cup heavy cream
- 2 cups Triple cheddar cheese, shredded
Instructions
- Boil potatoes in the broth until tender, about 10 minutes.
- Lower heat to simmer.
- In a mixing bowl combine the soup and sour cream.
- Slowly stir in the soup/sour cream mixture and let heat through.
- Stir in heavy cream and let heat through.
- Add 1 cup shredded cheese, a little at a time and stir until melted. Use other cup of cheese for topping.
- Add cheese on top, sour cream and chopped bacon
- Enjoy!
